Edinburgh won the first United Rugby Championship win by a northern hemisphere side in South Africa as Blair Kinghorn crossed twice.
Edinburgh led at the break through a Kinghorn try before Thomas Du Toit scored a try to cut the arrears.
Kinghorn and Boffelli kicked three out of three conversions to give the away team a landmark win.
Edinburgh is fifth in the table, with the Sharks dropping to seventh.
The centre was yellow-carded by the referee after he tackled Kinghorn in the air.
With Louw still off, Edinburgh pounced for an outstanding try as skipper Mark Bennett made a break inside the Sharks' 22, allowing Kinghorn to cross.
The conversion by Boffelli made it 0-7 and Edinburgh was helped when Curwin Bosch failed to find the target.
The visitors paid the price for repeated team transgressions after losing lock PiercePhillips to the sin-bin in the 40th minute.
Ox Nche knocked on with the line at his mercy as the sharks should have collected an equalising try. Four minutes later, they finally broke Edinburgh's defence, with Du Toit touching down, after more heavy-duty work from their forwards.
Bosch could not convert, with Edinburgh taking play back into the Sharks half through Ben Muncaster and Boffelli crossed for another try before adding the extras.
The game was decided by the final score, with the Sharks unable to find a way back into the contest as Kinghorn's late opportunist effort sealed the victory.
