The grilled cheese sandwich is a lunchtime staple that has been around for a long time. It's hard to go wrong with cheese on warm bread, even if you serve it with tomato soup.

There is a range of quality when it comes to the cheeses you can use. When you make a grilled cheese sandwich, look beyond American cheese.

Chefs were asked to share their favorite cheeses for grilled cheese. You can find exciting combinations of cheeses to inspire your next sandwich.

The head chef at Murray's Cheese Bar in Queens, New York advised to mix and match cheese to make it taste better.

Toma

Toma is a cow's milk cheese with a semi-hard texture and a creamy taste.

It has a mild, butter flavor that young kids enjoy.

She said to make sandwiches with TomaTruffle, which is the same cheese with Italian black truffle added, and serve them with sparkling wine.

Mild Cheddar

"Mild cheddar is always my go-to for a grilled cheese sandwich," said Osinkolu.

She said that mild cheddar has a nice flavor that stands up well to the other flavors in the sandwich without being overwhelming.

Sheana Davis, the owner of the Epicurean Connection, said that one of her favorite combinations is Carr Valley Cheddar with grilled onions and pretzel bread.

Gruyère

Alex Hill is a home cook and creator of Just Add Hot Sauce.

Davis likes to make a sandwich with meltygruy, thin-sliced ham, and aioli on sourdough. The rich butter flavor of sourdough makes it a good choice for chef and owner of Little Chef Little Cafe in Queens, Diana Manalang.

Osinkolu suggests that you pair the grilled cheese with mild cheddar to get a complex, delicious grilled cheese and tasty sandwiches.

Havarti

havarti is my favorite cheese for making grilled cheese for myself or my kids. We make a lot of Turkish toast, which is grilled cheese with a variety of variations.

Brie

One of my grilled cheese favorites is Marin French brie and orange marmalade on a walnuts bread.

Meggan Hill, executive chef for the recipe site Culinary Hill, said she likes this brand of brie for grilled cheese.

The grilled cheese of my dreams is a combination of havarti, fontina and brie with a spread of fig jam.

Sharp White Cheddar

The best grilled cheese starts with two thick slices of New York State Sharp Cheddar Cheese from Herkimer County Cheese.

He said to combine two thick slices of white bread, whole-grain mustard and freshly shredded cheddar and grill until golden. Then sprinkle the cheese on the bread.

The registered dietitian behind Beautiful Eats and Things also makes grilled cheese sandwiches with shredded sharp cheese.

She said she could not get enough of the distinct, tangy flavor of shredded cheese.

Favorite brands are Tillamook and Sargento. The founder of The Forest Feast said she prefers sharp white cheddar by Clover because it is local to her and they are certified B Corp.

Gouda

Brian Theis said that he likes to make a Dutch grilled cheese with Gouda cheese, saut and sweet onions and cremini mushrooms on tiger bread.

Chef Alexander Lord-Flynn, who is opening a restaurant in New York City in the spring, likes to combine smoked Gouda with aged cheddar and Swiss cheese.

He explained that he picks cheeses for their meltability first, so they melt into the pan and create those burnt edges we all crave. The cheese that makes people raise their eyebrows and do a dance is the Gouda. The sandwich has a smokiness and depth to it. You don't feel like you are eating cheese on top of cheese.

Pepper Jack

For a basic grilled cheese, I always love going for the classic cheddar cheese, but for some extra meltiness and flavor, I mix it with other cheeses.

Lewis recommends shredding hard cheeses like pepper jack for optimal melting, and she pairs this particular combo with sliced kimchi. A grilled cheese with pepper jack is what Theis likes to make.

He said that he uses pepper jack cheese, a bit of shredded Mexican cheese blend, with refried beans, tomato salsa and guacamole on pambazo.

Asiago

Theis shared his recipe for a grilled cheese made with Asiago.

It will melt best if you add a little smooth and melty shredded mozzarella. Of course!

Taleggio

If I'm looking for something more complex and elevated, taleggio, an Italian cheese very similar to brie, is what I'm looking for.

Depending on the season, she usually pairs this cheese with bacon or onion.

My all-time favorite is sourdough with a ripe, stinky taleggio, Dijon mustard, any kind of jam, cooked low and slow with butter until crisp and finished with fleur de sel.

Emmenthal

"I like to use three cheeses when I make grilled cheese: sharp cheddar, Parmesan and Swiss Emmenthal," said Remy Forgues, chef-instructor at the Institute of Culinary Education.

To make a grilled cheese sandwich, Forgues recommends buttering two slices of bread on one side each, and placing them in a pan butter-side down.

He said to put the cheese in the middle when putting the sandwich together.

Amul Cheese

One of my favorite combinations is a nice spread of Indian Amul cheese and a layer of Muenster cheese for a delicious grilled cheese that's got a cheese pull!

Amul cheese has a familiar flavor, but a slight tang and saltiness. Muenster has a rich butter flavor. It has the perfect fat content for heating up.

Monterey Jack is sometimes used instead of Muenster.

Comté

comté is an Alpine-style cheese that can melt easily.

The taste of tradition is what makes Comt a grilled sandwich.

Laura Werlin, the James Beard Award-winning author of six books on cheese (including two about grilled cheese), recommended a cheese that is similar to the one in Pleasant Ridge Reserve.

She said that the best grilled cheese sandwich needs to be a good melter and taste like something.

Fontina

Malfitano, of Murray's Cheese Bar, said that a great melter like fontina adds a nice flavor to grilled cheese.

Sharee Hill recommends combining Swiss cheese with Gorgonzola on sourdough bread.

The result is a creamy texture with a salty, nutty cheese flavor. I like to make this special grilled cheese with the Fabes Fontina and Gorgonzola cheeses from Whole Foods.

Yellow Cheddar

The one cheese I would take is Cracker Barrel Extra Sharp Yellow Cheddar.

He likes to make an English-style grilled cheese by combining sharp cheddar with a bit of blue Stilton cheese and eating it on a farmhouse loaf with butter and Branston Pickle.

Malfitano is a fan of yellow cheddar, which is sold at Murray's.

She said that New York Yellow is a great place to start for grilled cheese.

Brick Cheese

The Wisconsin brick cheese was endorsed by Davis. The cheese was named for its rectangular shape.

One of my favorite combinations is Widmer Brick Cheese with tasso ham and creole mustard on whole grain bread.

Smoked Or Flavored Cheddar

Chef Victor King of the Essential in Alabama recommends Tillamook smoked cheddar for grilled cheese.

There is an extra punch to be had with the suggestion of Beehive Cheese Red Butte Hatch Chile.

She said that the grilled cheese sandwich has the seasoning built in because it's a cheddar flavor with spicy New Mexico Hatch chiles.
