It is a startling message at first glance.

The counter at Arthur Bryant's Barbecue has a note that says "anything besides brisket or burnt ends."

More than two-thirds of sales at the barbecue institution on Kansas City's East Side come from the two cuts. The restaurant is urging customers to try other meats because of the increasing beef prices.

Jerry says he hates the prices he has to charge.

Four months ago, the brisket sandwich was $10, now it's $17. Each sandwich at Bryant is loaded with three-quarters of a pound of meat.

He said he was embarrassed by the pricing. Either that or you close your doors.

The cost of nearly all goods and services has gone up in recent months as the nation experiences the highest rate of inflation in 40 years. The price of most supplies has gone up at least 25%.

The skyrocketing prices of beef have been the worst thing to happen to the industry. Pork or poultry can be raised much quicker with longer gestation periods for cattle.

Consumers need to lay off beef for a while because of the high prices, but it's a tall order this time of year when people are grilling and smoking.

If you don't, we need to send a message that we're not going to eat beef products. It is a supply and demand issue.

If everyone went to a barbecue place and ordered pork for a week, beef prices would come down very quickly.

Since the start of the Pandemic, restaurants have faced supply chains that have been turbulent. There are significant labor shortages for packing houses and other suppliers.

The bad news is that prices seem to be going down. It has been so slowly.

Ryan Barrows, vice president of operations at Joe's KC, said that they hope that the height is starting to back off. We are not playing the same game, yet alone in the same ballpark.

The prices of many items have gone up, but soybean oil and beef have gone down.

Barrows said that there is not one product that has not risen in price in the last year and a half.

Meat prices plummeted in the early months of the Pandemic as restaurants closed and cities implemented stay-at- home orders. They spiked in the summer of 2020. The wholesale price of brisket was $7 a pound, a huge amount given how much volume a barbecue restaurant loses from meat shrinkage and trimming.

The price of the meat is now between $3.60 and $4 a pound. The local restaurants saw the price of brisket go up to $2.45 per pound two years ago.

Steve Ingala, director of operations at Mies Family Foods, said that it has been high for the last few months.

Consumers in Kansas City don't shy away from meat when prices go up.

When the price goes up, demand stays strong. As long as people are buying it at the consumer level, they are hungry.

Lower-priced meats are going up in price.

The per-pound price of fresh chicken breast is only 30 or 40 cents less than the price of whole briskets.

He said that in a normal market, chicken would be a fraction of brisket.

Egg and chicken prices are already at record highs, and are expected to go up even more now that several states have experienced an outbreak of avian flu.

Those with experience in food businesses are not new to this turbulence.
