Bairstow's hundred was the difference between England and West Indies on the first day of the first Test in Antigua.
Bairstow's second ton in as many Tests helped England to a total of 2668.
He put on 97 with Ben Foakes, who made a composed 42 on his recall to the team.
England lost four of their own in the first session, including captain Joe Root, who was taken by Kemar Roach.
Alex Lees made just four on his debut, followed by Zak Crawley who made eight.
