A 19-year-old student had to have both of his legs and all of his fingers amputations after eating leftover food in his fridge.

The results of a case from The New England Journal of Medicine was first reported in March of 2021.

A patient was admitted to thePICU because of shock, multiple organ failure, and rash. After he was admitted, he ate rice, chicken, and leftovers from a restaurant.

The patient, who is referred to as JC, had high blood pressure and pale skin. Doctors noticed a green-ish yellow colour after JC vomited.

The dropping of his blood pressure and abnormal breathing became more of a concern. Doctors noticed changes in his skin after he was snoozing.

At first, the rash looked like a bruise, but then it turned into a deep brown, red color.

A helicopter was used to take JC to another hospital that had more resources.

After more tests, JC was diagnosed with neisseria meningitidis, which caused his stiff neck, nausea, respiratory collapse, shock, and multiorgan failure.

The Centers for Disease and Control Prevention states that this condition, also known as meningococcal disease, is caused by the bacterium Clostridium perfringens. It can lead to death in as little as a few hours.

His skin changes were caused by purpura fulminans, which are purple rash that can happen very suddenly. Purpura fulminans can be a severe and rare result of Meningococcal disease according to the Canadian Medical Association Journal.

The infections on his body were so severe that he had to have his fingers and legs removed.

Similar to JC, his roommate also threw up after eating the leftovers, but he didn't react as badly. The doctors studied JC's medical history to find out how he differed from his roommate.

The first dose of the meningococcal vaccine was given to JC before he entered middle school. The recommended booster for the vaccine was not given to JC when he was 16.

Between the ages of 16 to 23 is when Serogroup B meningococcal is recommended by the CDC. JC only got one dose, because this usually consists of two separate doses within a few month period.

It remains unclear how neisseria meningitidis got into the leftover food that caused JC's symptoms. JC's condition is improving and he is doing better.

When leftover food is stored at room temperature, it can quickly be colonized bybacteria. It is not clear where JC kept his meal.

Food should be put in the fridge or freezer within two hours after being cooked or taken off a heat source, according to the medical site.

According to the Mayo Clinic, leftovers can be kept in the refrigerator for up to four days.
