An ode to Mum’s cooking, delicacies from India

My mom is one of the main reasons for missing India. Home cooked simple meals are not the same as thecurries that are found in restaurants. I show you what home-cooked meals are like at my place. True delicacies of India can be unique to each family or kitchen.

Breakfast is from India.

The bulgar wheat, also called cracked wheat, is used by mom for breakfast. You can have a healthy Indian breakfast with onions, mustard seeds, fresh Coriander, and peanuts.

Savoury.

If you don't like the idea of having a breakfast giant like Dalia, you can easily swap it for Poha. poha has several versions and cooking methods that are similar to dalia.

Uthappam is a Southern India classic that is loved throughout the country. The main dish here is a ferment rice and lentil batter cooked with onions, tomatoes, green chillies, and mixed in with coconut oil.

Neer Dosa is a version of the beloved dosa. This delicacy comes from the southern state of Karnataka, and is made with rice batter. Neer dosa is almost translucent and will melt in your mouth. What is better, Neer or Neer dosa? Neer Dosa with coconut chutney.

It makes its way to our house through our neighbours kitchen. Indian aunties sharing food across kitchens is a cultural exchange that I love.

Lunch is from India.

One of my favorite lunch menu items is Baigan. Chokha is a melange of fire roasted vegetables, mixed in with mustard oil and fresh Coriander leaves. The charred vegetable mix with dal and boiled rice is a flavour party.

I am lucky to have in-laws that come from Palakkad, a district in Kerela that borders the state of Tamilnadu. Their plates and palates reflect the same thing. We exchange our affection through food.

Visit to the in-laws usually means a beautiful feast that includes regional delicacies, like the Avial, which is a mixture of vegetables cooked in coconut milk and curry leaves.

Coconut Rice, Pesarattu, and Lemon Rice are included.

There are snacks from India.

My snacking habits are not good. I try as many seasonal fruits and drinks as I can when I visit India. I used the fruit and juice vendors in my neighbourhood to get some Sugarcane juice. The vendor was happy to see me walk over with a jar every day.

The hidden gems in India are Chikoo and Sitaphal, which are also known as sugar apple and sweet sop, respectively. These fruits have unique flavours and make great afternoon snacks or even dessert.

Chikoo is brown and Sitaphal is green.

Dinner is from India.

There are many delicious foods in India. Poori_ makes an appearance in every list, which is a deep fried bread made with unleavened whole wheat flour, which mops up the curry really well. In this case, it was used to clean up the Elephant Yam curry, a regional delicacy in many North Indian households.

This delicious meal includes some of my favourite items, like the Jowar/Bajra roti, accompanied by Bhindi, and the fire roasted eggplant prep.

The millet has Bhindi, Turai, and Toor dal.

The mothers have a way with food to show affection. If you are like me, you will eat more to show your affection.
