The League Cup finalist came crashing back down to earth with a fifth straight loss.
After a goalless first half, Blair Spittal's 72nd-minute cross evaded everyone in the area before nestling in Matt Macey's far corner to earn a first home league win since May.
The visitors looked laboured in the second half after the semi-final win, despite having Christian Doidge sent off with six minutes remaining.
The five-game losing streak is Hibs' worst top-flight run since the 2013-14 season and leaves them seventh, although Jack Ross' men have two games in hand on the four teams placed above them.
"I don't think we were poor, I don't think we were exceptional," Ross said. I don't think we deserved to lose the game. When we were down to 10 men, the only opportunities to come against us were in the final stages. We were comfortable before that.
We created good opportunities, but didn't take them. We puffed a lot and maybe ran out of energy after Sunday.
We need to get back to doing that as quickly as possible, but performance-level okay, we need to be better than okay to win games.
County moved to within a point of Dundee and four of Livingston in 10th place, despite having three glaring chances to make the win more comfortable.

By the time the referee blew the first whistle, Hibs fans would have been peeling themselves off the ceiling.
Ross stressed before the game how important it was for his players to get back to work as they looked to end their four-game losing streak.
The visitors got off to a slow start, as did County, who were playing their first game since losing at Rangers.
The effort should have resulted in a goal after the 10 minute mark.
The duo of Kevin Nisbet and Boyle combined again as they crossed for the Scotland forward. Nisbet tried to get his head on the ball, but he was diverted into the arms of Maynard-Brewer.
The former Dunfermline Athletic forward missed another opportunity headed as the Hibs showed signs of clicking into gear down the right.
Chris Cadden crossed for the strikers, who directed narrowly. Nisbet may have been chasing a hat-trick last term if he had been given the chance.
Jordan White had the chance to make the Hibs player pay for his poor finishing with a goal of his own. Nisbet passed up a golden chance from Joseph Hungbo's delivery.
County struggled when Hibs and Boyle turned the screw.
Cadden provided another dangerous ball after great work from the Australia international, who had the home defence scrambling. Paul Hanlon's finish took a nick before hitting a post.
As the second half progressed, the home side began to gain steam.
Spittal fortuitously gave County the lead after his low cross from the left trundled all the way into the far corner, after Hungbo forced Macey down to his right to parry wide.
Doidge was sent off 17 minutes after his introduction for a nasty challenge on David Cancola.
County's goal was fortunate, but they were not fortunate to get three points. The victory should have been more convincing after Spittal, Hungbo and Clarke all passed up one-on-one opportunities.
Ross will be without his talisman as well as Doidge for the trip to McDiarmid Park after Hibs were reduced to nine men after the whistle when Boyle was shown a straight red card for something he said to the referee.
Joseph Hungbo was the man of the match.
The on-loan Hornets winger has been a great acquisition for the Highlanders and continues to excel.
What did we learn?
Ross would have hoped the League Cup semi-final win over Rangers would be the start of a resurgence for his side.
The Leith club now have 11 games to contend with in 40 days after the defeat in Dingwall.
Nisbet needs to start firing to turn this around. This time last year he was in double figures, with four goals to his name.
County have been involved in basketball-like games a lot this term. The last four home league games saw 20 goals scored - eight for and 12 against.
Three points coupled with a third clean sheet of the league season is a huge boost for County, and with the next four games coming against Dundee United, St Mirren, St Johnstone and Dundee, it gives them the chance to build on their good start.
What did they say?
The fans have been watching us play well, but not get the results. I'm disappointed that we didn't take advantage of the chances to make it more comfortable.
I told them that if they showed that in the second half, the chances would come and they did.
The referee told Jack Ross that Doidge's red card was for violent conduct, which he will need to see.
I know it's a red card for something the referee says Martin said to him, but Martin says he didn't, so it's one person's word against the other's. The referee usually wins in that case, so we will see how that one pans out.

Both sides will be playing on Saturday as County play Dundee United and Hibs play St. John's.
