Disney has confirmed that you won't get to try the real retractable lightsaber, which was revealed in April and May of this year.
The new Star Wars: Galactic Starcruiser hotel is already sold out for its first four months, despite the fact that the lightsaber replica will feature at the hotel.
That lightsaber is not for use by guests. It is only used by the performers.
According to GameSpot,rowbridge confirmed in a group interview that guests will never actually use that lightsaber, but that it will be part of the Galactic Starcruiser experience.
Damn.

You will be given a lightsaber replica with a fixed blade that is slimmed down and high-end. If you walk in expecting to play with the new one Disney has developed, let this serve as a warning, because you power it up and all of the sounds and vibrations you would expect are there.

The session involves using the provided lightsabers to stop the laser beams from being fired. It starts off slow, and then it gets to Jedi level where you have to block attacks without even seeing the lasers. The lightsaber used in this activity is similar to a Force FX lightsaber, but it is only meant to be used for lightsaber training and won't be available for sale.
