The number of restaurants in California is increasing.

Dining rooms are following suit as the state prepares to become the fourth largest economy in the world. At a ceremony in Los Angeles on December 5, the guide gave three stars to San Diego's Addison. There are seven area restaurants that hold that designation. New York has only five stars and has not changed in five years.

The international guide has a three star ranking. The cost of a three-star tasting menu has gone up.

California ingredients with global influences are highlighted by the chef. He has moved away from the meat that has traditionally dominated fancy menus towards vegetables and seafood.

"Addison really impressed us that each year it was getting better and better and better." Over several meals this year, which involve not just the US local inspection team but a global team, it was unanimous that this was a restaurant indicative of three stars, or the highest level of the global rating.

It is the first restaurant in Southern California to get three stars. SingleThread in Healdsburg, where Kyle andKatina Connaughton highlight produce from their farm, is one of the destinations included. Manresa, which has had three stars in the last two years, is closing at the end of the month.

There are 89 starred restaurants in the guide. The number of dining rooms with stars is the same as last year.

When the state's economy is growing, the number of two-star restaurants on the list decreases. Vespertine in Los Angeles is currently taking reservations only for private events and is not included in the list.

The chief inspector says that Coi was treated more as a closing than a demotion because it had been temporarily closed.

Gwen, the butcher shop-dining room, is one of eight places in Los Angeles that fit the definition of a very good restaurant. There are seven new one star spots in San Francisco, including Ssal, a Korean tasting-menu restaurant with a singular membership plan and house accounts for $300 every three months.

13 San Francisco spots fell off the one-star list compared to Los Angeles, which gained both two-star and one-star places, but the balance of restaurant power has continued to shift south. The Bay Area gained seven new starred places.

California is moving forward as a force in the food industry. The overall quality of the food scene in California has evolved over the years according to this year's list.

The new guard of California cuisine was one of the restaurants that lost out on the prestigious award. There are places in San Francisco and LA. The Wolfgang Puck CUT restaurant in Los Angeles is no longer considered a starred spot.

The company didn't go out of its way to see women. The restaurant at the winery has a woman at the head of the kitchen. Manzke in LA and Ssal are both run by husband and wife teams.

Three new restaurants falling in the category of Japanese cuisine is a good sign. Korean cooking is starting to be recognized in a broader way. San Ho Wan is owned by a man with three stars at Benu who is also the co-owner of San Ho Wan.

The guide's California Bib Gourmands are the cheapest in the world. There were 15 new spots in this year's guide. Last year there were 45 additions. Two courses and a glass of wine or dessert for less than $48 is what is needed for Bib Gourmands. The figure was$40 in 2019. The Southeast Asian Good Good Culture Club in San Francisco is one of the new entries this year.

According to the chief inspector, there are 56 distinct cuisine types in the selection by the French company.

The inspector says that they knew that California cuisine would be important when they launched the first West Coast version of the guide. We knew from the beginning that California cuisine was very important.
