The menu at Ricky Saward's restaurant is an extension of his "root-to-leaf" philosophy, with seasonal ingredients such as celeriac, gooseberry and red cabbage plucked from the restaurant's own permaculture farm. London's Gauthier, where the menu has been meat-free for just over a year, is located in a Regency house in Soho. Diners can experience a wide range of the kitchen's skills through his eight-course tasting menu. The vegan version of the duck-liver equivalent is called the 'faux gras'.

At Jean-Georges Vongerichten's ABCV, there is an upgrade to healthy fare that promotes plant-based intelligence. The menu at ABC Carpet & Home on East 19th Street is partially inspired by Vongerichten's travels around Asia, with classics like south- Indian Dosa and green chickpea Hummus, as well as fresh salads and sandwiches.

Restoran V is a cozy, wood-panelled place that serves Baltic soul food with a twist. Sweet potato is plated with a mango tahini sauce and can be eaten at home. When my mother and I came back three nights in a row for the vegan dessert, the founder was very accommodating.

The world-famous Eleven Madison Park had already taken the plunge, and if the 50,000-strong waiting list was any indication, the future is plant-based. The food is still delicious, but it's easier to make a reservation today.

Wild & The Moon is a vegan go to in the city. Local, organic and ethicallysourced ingredients are used wherever possible in Sawko's dishes. One of the healthiest places in the U.S. is this place, which serves wild-truffle pizza on coconut crust with cashews and almonds, as well as orange-blossom pancakes with homemade coconut whipped cream. The has branches in Amsterdam and Paris.

The majority of Mother's ingredients are made on site, from the dairy-free "chvre" to the numerous sauces and ferments that line the kitchen walls. There is a new reason to visit Potato Head, a new vegan dining concept led by chef Dominque. The hot-ticket beach club was first announced in 2020 and opened in January. Small plates such as shio-koji-tenderised watermelon and cold smoked pumpkin are on the menu. You can get an array of Indonesia-inspired cocktails.

Joia is located in Milan.

The oldest vegetarian restaurant in Europe is located near the Piazza della Repubblica and has been open for 25 years. Pietro Leemann is a pioneer of sustainable dining and each dish is an homage. All options are prepared with only organic and biodynamic produce.

Most diners at Grn opt for the 13-course vegan option, so don't be deterred by the omnivore friendly menu. The city stopped serving meat at official events last year. Tomatoes cured in kombu, redcurrant and preserved ramson are one of the highlights of the autumn menu.
