Three new high-level resort appointments have been announced. The food and beverage team has two new hires. The director of engineering has also been named.

He brings over 30 years of experience as an executive chef to the team. From France and New York to Colorado, Coudouy has experience all over the world. After finishing his education in France, he ranked at the top of the list of school graduates. Prior to joining the team at Grand Hyatt Vail, he was the owner, operator and executive chef at Gore Range Brewery in Colorado.

Clay has a long history of working with Hyatt Hotels and has been promoted to the position of director of food and beverage operations. She worked in food and beverage at Hyatt Regency Waikiki Beach Resort and Spa for four years before moving to Hyatt Regency Lake Tahoe Resort Spa & Casino, Hyatt Regency Denver at the Colorado Convention Center, and Hyatt Regency Coconut Point Resort & Spa. Clay worked at Hyatt Regency Seattle as an assistant director of operations.

He has 20 years of experience as a marine engineer and 15 years of experience providing facility maintenance management at a large resort, which makes him a perfect fit for his new role. An experienced traveler, Knowles has worked as director of engineering at several 5-star resorts and properties, including the Four Seasons Residences and Resorts in Anguilla, the Malliouhana Resort and Spa in Anguilla, and the South Seas Island Resort in Captiva, FL. At the Four Seasons Resort Lana'i in Hawaii, Knowles was the senior director of engineering, and prior to that he was the director of engineering.
