Mooy joins Celtic on a two-year deal, while Jenz arrives from Lorient on a season long loan.
Mooy rejoins with his former international manager at the Scottish champion after he was most recently with Chinese sideShanghai Port.
He has played for more than 300 clubs and has 52 caps.
The Celts have an option to buy Jenz.
He moved to Lorient from Lausanne-Sport on a five-year deal in the summer of 2016 and made 18 appearances, 17 of them starts, as the club finished 16th in the French league.
Mooy was wanted by several Championship clubs and moved to Glasgow along with him.
"I'm delighted we've been able to bring in both of them, and I'm sure they'll be great additions to our squad," he added.
I know him from my time as the Australian national team's coach, and he has a lot of experience at both club and international level.
"Moritz is a player we've been aware of for a while now, and I'm happy that we've been able to sign him." I'm sure they'll settle in very quickly after meeting the rest of the squad.
In the summer, Celtic signed Alexandro Bernabei, Benjamin Siegrist, Jota, and Daizen Maeda, who had been on loan.
