The whole point of the Standards & Practices department is to find anything that might get them a call from an upset parent, and Disney wants to be more careful than most other companies. Some of the notes are so crazy that Disney asked them to come up with the dirtiest, most inappropriate ways to take every single idea, image, and word. S&P had to create a potentially dirty rhyme due to the fact that "There once was a man from Kentucky" isn't an existing limerick. They were in their heads.
This isn't the first time he dragged his former employer, and he did it when Pride month began in 2021.
I don't think there will be any more Gravity Falls in the near future. It's probably a possibility.
