The average wage for Birchard's employees is between 20 and 25 dollars an hour. He said that front-of-house staff are paid between $10 and $15 an hour.

He said that he couldn't find an employee that would work for less than 20 dollars an hour.

He said he'll be able to hire some college students who are staying in New York for the summer, but he's looking for a different group of people.
